Summer Hawaiian Hot Dogs with Pineapple Relish over Cauliflower Rice

Melissa Urban, co-creator of Whole30, shares how she enjoys her hot dogs Hawaiian-style. Using sautéed cauliflower rice as a base, Melissa incorporates sweet, salty, crunchy, and creamy elements by topping her hot dogs with a pineapple relish, crumbled bacon, and Primal Kitchen® BBQ sauce .

Ingredients

Cauliflower Rice:

  • 4 cups cauliflower, riced
  • 2 Tbs. coconut oil
  • 1 tsp. sea salt
  • 1 whole scallion, minced
  • ½ tsp. black pepper
  • 1 tsp. garlic powder

Pineapple Relish:

  • 2 cups fresh pineapple, diced
  • ½ medium jalapeño, seeds removed and minced
  • 1 tsp. sea salt
  • ½ tsp. black pepper
  • ½ cup fresh cilantro, minced
  • 2 whole scallions, minced
  • 2 Tbsp. red onion, peeled and minced
  • ½ cup avocado oil
  • Juice from ½ lime

Instructions

  1. Prepare your cauliflower rice by sautéing cauliflower in coconut oil and sea salt until is begins to soften. Gently toss in remaining ingredients. Set aside.
  2. Gently toss all pineapple relish in a medium bowl and set aside.
  3. Fire up your grill or grill pan (if inside) and heat hot dogs through, until they have nice grill lines.
  4. Make slits in each hot dog and fill with pineapple relish.
  5. Serve 2 hots dogs stuffed with relish and BBQ sauce over a bed of cauliflower rice.
  6. Enjoy!
