Crispy Genoa Chips with Herb and Goat Cheese Dip

Salami chips

A unique way to serve salami with a delicious tangy goat cheese dip. Very easy to prepare and a great option for entertaining

6-8 servings | Total Time: Less Than 15 Mins

Ingredients

  • 2 (4-ounce) packs Applegate Naturals® Genoa Salami
  • 10 oz. fresh soft goat cheese
  • ¼ cup extra-virgin olive oil plus more for drizzling
  • 5 tablespoons plain yogurt
  • 2 tablespoons fresh chives, chopped
  • 2 tablespoons fresh flat leaf parsley, chopped
  • 1 teaspoon fresh mint, chopped
  • 1 teaspoon fresh thyme, chopped
  • ½ teaspoon fresh rosemary, chopped
  • Kosher salt and fresh black pepper

Instructions

  1. Preheat oven to 375°F, line two sheet pans with parchment paper.
  2. Place salami in a single layer on baking sheets and bake until crispy, about 20 minutes. Transfer the salami chips to a paper towel-lined plate to remove any excess fat.
  3. Combine goat cheese, oil and yogurt in a food processor and blend until smooth. Transfer to a bowl and mix in the fresh herbs.
  4. Season to taste with salt and pepper.
  5. Cover and refrigerate until the dip is cold and the flavors have blended, 3 hours to overnight.
  6. Drizzle with additional extra virgin olive oil before serving.
  7. Serve salami chips and dip together.
