Mexican-Style Breakfast Bowls with Beef Bacon Recipe

Colorful, fresh and flavorful, this bowl is exactly what you want in a breakfast. Beef bacon adds smoky meatiness to the bright combination of beans, eggs, crunchy cabbage and creamy avocado.

Ingredients

  • 1 (8-ounce) package APPLEGATE NATURALS® No Sugar Uncured Beef Bacon
  • ½ small cabbage, shredded
  • Freshly squeezed juice of 1 lime
  • Kosher salt and freshly ground black pepper
  • 1 (15-ounce) can black beans, warmed
  • 4 large eggs, fried sunny-side up
  • 1 ripe avocado, pitted, peeled and sliced

For serving: salsa verde, pickled red onions and crumbled queso fresco

Instructions

  1. Cook the bacon according to package instructions. Set aside to drain on paper towels.
  2. While bacon cooks, toss the shredded cabbage with the lime juice and season with salt and pepper. Warm the beans, and fry the eggs.
  3. To assemble the bowls, divide the cabbage evenly among 4 bowls. Top each bowl with a scoop of black beans, a fried egg, sliced avocado and strips of beef bacon. Serve with salsa verde, pickled red onions and crumbled queso fresco.
