Mexican-Style Breakfast Bowls with Beef Bacon
Colorful, fresh and flavorful, this bowl is exactly what you want in a breakfast. Beef bacon adds smoky meatiness to the bright combination of beans, eggs, crunchy cabbage and creamy avocado.
Ingredients
- 1 (8-ounce) package APPLEGATE NATURALS® No Sugar Uncured Beef Bacon
- ½ small cabbage, shredded
- Freshly squeezed juice of 1 lime
- Kosher salt and freshly ground black pepper
- 1 (15-ounce) can black beans, warmed
- 4 large eggs, fried sunny-side up
- 1 ripe avocado, pitted, peeled and sliced
For serving: salsa verde, pickled red onions and crumbled queso fresco
Instructions
- Cook the bacon according to package instructions. Set aside to drain on paper towels.
- While bacon cooks, toss the shredded cabbage with the lime juice and season with salt and pepper. Warm the beans, and fry the eggs.
- To assemble the bowls, divide the cabbage evenly among 4 bowls. Top each bowl with a scoop of black beans, a fried egg, sliced avocado and strips of beef bacon. Serve with salsa verde, pickled red onions and crumbled queso fresco.
