Chopped Cobb Salad Boats

Chopped Cobb Salad Boats

To keep this chopped salad grain-free, we like to serve it in crisp romaine lettuce leaves, but it can also be folded into a roll, pita or wrap, or eaten all on its own.

Remove 6 leaves from the head of lettuce and place on a large cutting board; save remaining lettuce to use as “boats”. Top the lettuce leaves with the ham, turkey, bacon, hard-boiled eggs, tomatoes and avocado. Using a large sharp knife, chop the mixture all together until coarsely chopped. Add the ranch dressing to the center of the pile then continue to chop until evenly chopped.

 

Separate the remaining lettuce leaves. Scoop the chopped mixture into the lettuce leaves and serve at once.
