Mini Avocado Toasts with Citrus Ginger Turkey
Colorful, creamy, crunchy, citrusy—these little bites have it all!

- Pit and peel the avocado, placing the flesh in a bowl with the lemon juice. Smash with a fork or potato masher until well combined. Season to taste with salt and pepper. Set aside.
- In place of mashing and seasoning a fresh avocado for these toasts, feel free to use prepared guacamole, such as any flavor by Wholly Guacamole.
- Cut off the crusts from the toasted bread, then cut each slice into 4 small squares. Brush some olive oil over each toast square. Top each square with some of the avocado mixture and some of the pickled onions. Roll each turkey slice into a tight roll, then cut crosswise into 4 pieces. Place a turkey roll on top of each toast and secure with a wooden pick. Garnish with chives and serve at once.
