Turkey “Sushi” with Lemon Miso Dressing

This protein-packed lunch will make you look twice! Turkey takes the place of rice for these little roll-ups, though you could happily substitute Applegate Naturals® Slow Cooked Ham or Applegate Naturals® Oven Roasted Chicken Breast.

Ingredients
- 8 slices Applegate Naturals®
Oven Roasted Turkey Breast
- 1 small cucumber, shredded
- 1 carrot, shredded
- 1 avocado, pitted, peeled and sliced into 16 pieces
For the dressing
- 2 tablespoons white miso
- 2 tablespoons fresh lemon juice
- 2 tablespoons water
- 1 tablespoon maple syrup
- 1 tablespoon soy sauce
Instructions
- Lay a piece of turkey on a work surface. Arrange a small handful of the cucumber and carrot along the bottom third of the turkey.
- Lay 2 slices of avocado over top. Starting from the bottom, roll up tightly to enclose the veggies.
- Lay the roll seam-side down and cut into 6 pieces.
- Repeat with the remaining turkey and veggies. Serve with the dressing.
For the dressing
- Whisk all the ingredients together until smooth. Set aside.
