Liege Waffles Recipe

"I've been making these waffles for years, and everyone loves them. The pearl sugar (easily available online) is what gives them that distinctive caramelized sweetness. The waffles are perfect plain out of the iron or topped with fruit or ice cream. They make great holiday gifts too. There is really no wrong way to eat these! They freeze well and can be popped in a toaster oven or microwave to reheat. Also, there's no need to have a Belgian waffle iron for this recipe-a regular waffle maker will work just fine."

Ingredients

  • 1 1/3 cups (300 grams) unsalted butter 
  • ¾ cup warm water (about 100°F) 
  • 2 tablespoons (25 grams) granulated sugar 
  • 1 (7-gram package) fast-acting yeast (2¼ teaspoons) 
  • 2 large eggs, lightly beaten 
  • 1 teaspoon vanilla 
  • 3 cups (420 grams) all-purpose flour 
  • ½ teaspoon kosher salt 
  • 1 cup plus 2 tablespoons (200 grams) pearl sugar

Instructions

  1. Melt the butter and cool to lukewarm. Combine melted butter, warm water, granulated sugar, and yeast in the bowl of a stand mixer. Add eggs and vanilla and mix gently. Add flour and salt and beat the dough for 7 minutes. Add pearl sugar and mix for 3 minutes more. The dough will likely be sticky and difficult to work with-this is normal. Cover dough with a clean dish towel and let rest in a warm place for about 30 minutes. 
  2. After dough rests and rises, heat waffle maker. Drop 2 to 3 tablespoons of dough onto each section of the waffle maker. Close and bake until well browned. Serve hot off the iron, or cool completely and freeze for treats to enjoy later.
