Irish Soda Bread

Ingredients
- 3 cups all -purpose flour
- 2/3 cup sugar
- 3 tablespoons baking powder
- 1 ½ teaspoons kosher salt
- ½ cup (1 stick) unsalted butter, softened, plus more melted butter for brushing
- 1 cup raisins
- 2 large eggs
- 1 cup buttermilk or sour cream
Instructions
- Preheat the oven to 400° F. Lightly butter a 10-inch round baking pan or cast- iron skillet.
- In a large mixing bowl, sift together the flour, sugar, baking powder, and salt. Add butter and mix until flour looks like coarse meal. Stir in the raisins.
- In a separate bowl, mix eggs and buttermilk together then add to the flour mixture. Mix until thoroughly combined, then turn out onto a floured work surface. Knead about 8 times, give or take. For m into a round and place in the baking pan. Use a sharp knife to cut a shallow cross into the top of the dough . Brush a little melted butter on top.
- Bake at 400°F for 15 minutes. Reduce temperature to 350° and bake for an additional 45 minutes. To test if bread is done, use a knife or toothpick -if it is dry and clean, the bread is done. Remove from the oven and let cool at least 20 minutes before serving.
