Peaches are synonymous with Georgia, and with summer, and this is definitely the simplest summertime dessert we know, especially when everyone’s already outside enjoying dinner and the grill is dying down after cooking the main meal.

Cut the peaches in half and discard the pits. Lightly oil a clean grill rack and place over a moderate heat. Place the peaches cut side-down and cook until slightly softened and grill marks appear, 3 to 5 minutes. Flip, then sprinkle the indentations where the pits were with some of the raw sugar and grill until the sugar is melted and the peaches are tender, 3 to 5 minutes more. Transfer the peaches to bowls, then add scoops of vanilla ice cream and serve at once.
