Hatch green chiles—long, meaty, green chiles that come in a range of heat and are roasted before serving—pervade New Mexican cuisine. Canned green chiles (usually available mild or hot) are available in most grocery stores, but in the fall, you might be able to find freshly roasted Hatch green chiles. Though these chiles require a little more work in terms of peeling and de-seeding, the flavor is incomparable.
