Sun-Dried Tomato and Italian Sausage Quick Meal


Even though I am a professional recipe creator, it can be challenging at times. Most weeknights, I just want to throw something together without a concern about the exact measurements. Fortunately, I’ve learned to slow myself down just enough to document these tasty quick meals, so that you can enjoy them too.

This is an easy dinner that I made recently to take advantage of the late summer / early far zucchini harvest and some delicious sun-dried tomatoes. It is naturally gluten-free, dairy-free, soy-free, and event sugar-free! Don’t you just love healthy meals that come together quickly?

Serves 4

Ingredients

Zucchini Sauté:
  • 2 Tablespoons (or oil from sun-dried tomatoes)
  • 1-1/2 lbs. zucchini or pattypan squash, sliced into ¼-inch slices (about 4 small zucchini)
  • 1/2 teaspoon garlic powder
  • 1/2 to 3/4 teaspoon salt, or to taste
  • Freshly ground black pepper, to taste
Italian Rice:
  • 1 tablespoon olive oil (or oil from sun-dried tomatoes)
  • 1 cup diced onion
  • 4 Applegate Sweet Italian Dinner Sausage (1 package), sliced 1/4-inch thick
  • 3 cups cooked (leftover) brown or white rice
  • 1/2 cup diced sun-dried tomatoes in oil, drained
  • 1/4 teaspoon garlic powder
  • 1/4 to 1/2 teaspoon salt
  • Freshly ground black pepper, to taste

Directions

  1. For the zucchini sauté, heat the oil in a large skillet over medium heat.
  2. Add the squash and sauté for 3 to 5 minutes, or until it just begins to reach your desired tenderness – we don’t want mush here!
  3. Add the garlic powder, season with the salt and pepper to taste, and cook for 30 seconds more, stirring to distribute all of the flavors.
  4. Remove the zucchini from the pan and keep it warm while you make the rice.
  5. For the Italian rice, keep the heat at medium, and add the oil.
  6. Add the onion and sauté for 3 minutes.
  7. Add the sausage and sauté for 3 minutes or until it just begins to brown.
  8. Stir in the remaining ingredients, seasoning with the salt and pepper to taste. 
  9. Divide the zucchini sauté and rice between four plates to serve.
